Too Hot ...

This shit is BANANAS! Seriously, its eleventy million degrees outside. This makes me grumpy and in turn, makes me not want to blog. I'm gearing up for Autumn, so in honor of how terrible it is, here is some amazing inspiration that is in no way summery. Enjoy!

Summertime Sweet Tea

Is there anything better than sweet tea on a hot day? I love the South! Everyone has their special way of making tea. My grandmother puts a whole cup of sugar in hers! My mom ads lemon and always keeps a pitcher of unsweet next to the sweet for those who can't handle the real version. I've got my own little twist as well! This recipe is especially wonderful in the heat, so I call it my Summertime Sweet Tea.

2 family size bags of Luzianne tea
boiling water
1 orange, sliced
1 lemon, sliced
1 large sprig of mint
1/2 cup sugar or Splenda
2 quart pitcher w/top

I'll start with the basics, in case you don't know how to make tea. [no shame! we all have to start somewhere!] I always use Luzianne; it's delicious, affordable and made in New Orleans. I use caffeinated sometimes, since I like to drink tea at suppertime. Bring a teapot full of water to boil, remove from heat and place the tea bags in the pot and let them steep for at least 10 minutes, I usually let it steep for about 15. [I read somewhere to let it steep for "no more than 2 minutes" ... that is crazy! Let it sit and get good. Haha.]

Add the sugar to the pitcher, pour in your tea and fill the rest of the pitcher with water [leave a couple of inches at the top.] Stir it together and let it cool off for a few minutes. Add fruit and the mint [don't break up the mint, just put it straight in!] and refrigerate, with top/lid. I like to use the kind that has a strainer for easy pouring.

Serve over ice, garnish with mint/lemon. Délicieux!

Summer Steak Marinade

I hate summertime. There, I said it. It's too damn hot here in Louisiana, but somehow we manage to survive each year. Brandon and I rarely eat red meat at home, but I've been seeing so many great grilling pictures on Pinterest and Instagram that I finally caved. Well, to be honest ... the sale at Albertson's didn't hurt either. We got 3 packs of grilling steaks for the price of one; buy one, get TWO free! Yay!

When I got home I realized that I'm not as comfortable with red meat as I am with fish as far as my preferred method of cooking goes ... which is make-it-up-as-you-go, freestyle cooking. When I opened the package of meat I saw some grey areas [ew!] so I checked the wonderful internet and double checked by calling my mom, who is herself, a wonderful cook. She assured me that it's the smell you have to worry about, really. The grey is a chemical reaction that happens when the meat becomes oxidized. So, as long as you mind your sell by dates and watch for the stank.

I love Mexican food, so I decided to have a summery steak night with Mexican flavors. What comes to mind for me when I think of summer and grilling is cilantro, peppers, garlic ... all the garden goodness that is light on the tummy and fresh tasting to help beat the heat. [with a margarita or two, as well!]

For my delicious lime & garlic marinade I used extra virgin olive oil; white wine vinegar; the juice of 2 limes; plus two limes, quartered; a little bit of zest; a few large cloves of garlic, halved; cilantro; fresh cracked pepper; cumin & kosher salt. You should know by now that I'm not great at measuring, so use your own judgement. You'll need about equal parts of lime juice, oil and vinegar, if that helps.

If you don't have any WWV, you can use a vinaigrette dressing. It will be a little more rich, but you definitely need it rather than going without. Apply the spices directly to the meat, mix the liquid ingredients [including the oil, vinegar, juice & zest] in a separate bowl, whisk them together until blended. In a plastic freezer bag or Tupperware,  place the seasoned steaks along with the halved garlic cloves and quartered limes. Pour the marinade over the steaks and make sure they're totally covered. Now wait! I only marinated this for about 4 hours, but you could probably marinate it over night as long as it's properly sealed.

My favorite part of the meal was grilling the halved garlic cloves and limes right along with the steak. I added some red onions as well and they made a great addition to the meal. I love grilled veggies! [I especially love blackened garlic.] We had our lime & garlic marinated steak with a large salad, chips & salsa ... and a Corona Extra. Delish!

ARThlete ♥ {Positive Motivation}

Summer is here! Time for me to hibernate! Seriously, I hate it here in the summertime, it's just too damn hot. Since I'm not going to be at the Farmer's Market with my little Zombees and I'm also not taking any classes in June, I've decided to amp up my workouts in an attempt to make the miserable, unbearable summer go by more quickly!

I'm  a very visual person, so I often look up pictures to motivate myself into working out or maintaining a healthy lifestyle. Sometimes you just need a little "umph" you know? When you google these types of things, you often get a lot of "thinspo" [short for thin-spiration] which is a good idea in theory, but is generally produced and circulated by teenagers pretending to have eating disorders. There is nothing worse than looking for good workout motivation pictures and finding bony and horrifying pictures of girls whose inner thighs don't touch when their ankles are crossed with superimposed text like "he'll love you when you can do this." Yikes! Definitely a laugh/cry/eat situation.

More recently, there have been new developments in this inspirational venue with "fitspo" [short for fit-spiration, I guess? They're losing me on this ...] which is all well and good until you come across that picture of a girl with an 8 pack and what appears to be the beginnings of a penis with superimposed text like "SWEAT IT OUT, BITCH!" Yikes, again. Definitely a laugh/laugh/nightmares situation.

TheBerry.com recently started doing Daily Motivation posts which are just great. They weed out the ridiculous and focus on something attainable and actually inspirational. I highly recommend it!. I also highly recommend ARThlete.tumblr.com. This girl draws the cutest little real-life-meets-Disney-princess girls of normal or healthy-range weight with motivational quotes. They're all positive and I think that is what I like best. I've added some of my favorites below. Enjoy! ♥
